Lemon Coconut Cookies
1 Cup Almond Meal (Can make from grinding up soak-dried Almonds)
1 Tbsp. Coconut Flour
1/4 C. unsweetened Coconut flakes
1/4 C. Raw Honey
2 Tbsp. Coconut Oil (Cold-Pressed Extra Virgin)
2 tsp. fresh lemon juice
Zest of 1 Lemon

Combine and Spoon onto Cookie Sheet lined with parchment paper
Bake at 350 degrees for 10-11 minutes
Cool on wire rack for 5 minutes and sprinkle top with coconut flakes or powdered sugar
