Mediterranean Quinoa
1-2 Cups Cooked Quinoa (Instructions for cooking quinoa)
4 Tbsp. Olive Oil, divided
2 Fresh Garlic Cloves, minced
1/4 tsp. Crushed Red Pepper (omit if you don't like it spicy)
8 oz frozen spinach or several handfuls of fresh spinach
1 15 oz. can of chickpeas, drained and rinsed
1/4 -1/2 Cup sun dried tomatoes, , chopped
1/4-1/2 Cup Kalmata Olives, pitted and halved
1 Tbsp. Greek Seasoning -from Penzy's
1 1/2 tsp. Basil
Sea salt and pepper to taste ( I usually don't need this)
Directions:
Cook up Quinoa ahead of time (basic quinoa instructions) and pre cut all olives, tomatoes, and greens
Put 1 Tbsp. Olive Oil in a pan with the minced garlic, and saute until the garlic is fragrant
If using frozen spinach, add this now until is starts to cook down, otherwise
Add Chickpeas, Sun Dried Tomatoes, and Olive and Cook for 1 minute
Then add the Greek Seasoning and Basil, crushed red pepper and the spinach if using fresh and cook until the spinach starts to wilt a bit
Add the cooked Quinoa at this point with the remaining 3 Tbsp. of Olive Oil , cook for a few more minutes and
serve warm or cold.
