One Minute Mayonnaise
1 egg (organic eggs if possible)
1 tablespoon white vinegar or raw apple cider vinegar
1/2 teaspoon salt
1 1/2 cups unrefined canola oil
Place the first three ingredients in food processor bowl. Measure the oil and
have it ready. Turn the processor on and once the egg is mixed, begin pouring
the oil through the feed tube while it’s still running. Start with a thin stream
and increase the flow until all the oil is incorporated. The mayonnaise should
be done by the time all the oil is in, but run it a few more seconds if it’s not
thick enough. Store in refrigerator for up to ten days.

Coconut Mayonnaise
1 whole egg
2 egg yolks
1 Tbsp. Dijion Mustard
1 Tbsp. Fresh lemon juice
½ tsp. sea salt or Celtic salt
¼ tsp. white pepper
½ cup coconut oil, melted
½ cup olive oil
Put the eggs , mustard, lemon juice, salt, and pepper
into a food processor or blender:
Then with that running on low speed, start adding the oils very slowly. Start out with drops and
then work up to about a 1/16 inch stream.
It should take about 2 min.
to add the oil. Continue blending
until there is no-free standing oil.
